Pablo & Rustyā€™s was founded by Saxon Wright back in 2003, named after his two coffee loving brother-in-laws. Initially it launched as a cafe on Sydneyā€™s North Shore with a small off-site roastery, but evolved quickly into numerous outlets spread across Sydney. However after cafes came knocking to supply wholesale, the roasting side of the business grew quickly and became the core focus. Currently their two stores in Sydney CBD and Brisbane CBD still remain and they use these as their ā€˜sand pitsā€™ to test coffees, equipment and ideas in the pursuit of the best cafe experience.

Paramount Coffee Project was established as a collaboration between Jin Ng of Paramount House, Mark Dundon of Seven Seeds and Russell Beard of Reuben Hills. Opening in Surry Hills, Sydney in 2013, together they envisaged a space which would showcase the variety of styles and approaches in quality coffee. The cafƩ is a collaborative project to look at coffee differently in a cafƩ environment. Education and exploration of roasting styles, brew methods and coffee/cafe approach is the aim.
