John Mills Himself Cafe was established in 2014 and is housed on the ground floor of the ā€˜John Mills Himselfā€™ building at 40 Charlotte Street, Brisbane. It is owned by Marcus Allison who also owns and operates Bunker Coffee in Milton which was established in 2010.

Their business philosophy is for sustainable profit and attempts to maximise quality, environmental sustainability and best practice ethics. In conjunction with the John Mills Himself Bar, they are committed to sourcing local products where possible. They seek to be innovators in the industry and their motto is Do What You Want.

They are what can be known as a ā€œmulti-roasterā€ cafe. They do not contract with any particular roaster, instead choosing to support and work with all local roasters who they feel align with their business ethos and are willing to work with them. They currently source coffee from Mecca, Small Batch, Sample and Wood & Co. Coffee Roasters.

They use Heirloom Chocolate and have over 10 flavours for their 70% Dark, Dairy Milk and White hot chocolates. They source their milk locally from Barambah Organics and Maleny Dairies. They also have cakes and pastries baked fresh from Crust and Co and Leavain Bakeries.

Part culture, part connection, Let Minnow CafƩ comes from a family that shares a love for food and Brisbane. Their meals reflect the Brisbane region: its climate, its farmers and its culture. Restoring their beautiful 100-year-old house, formally known as the Clayfield Aquarium, gives Let Minnow CafƩ the rich historical character that customers feel when they walk through their doors. Food miles are at the forefront of their minds, which is why they source the majority of their fruit and vegetables from a 160km radius of Brisbane.

Thatā€™s also why they have a beehive and herb garden set up in their very own backyard. They also believe in inclusivity, meaning that everyone is welcome and has a place at their tables. The place are a wheelchair and pram accessible along with being children, dog and food intolerant friendly.
