Delicious banana muffins - easy to make for everyone.
banana muffin, muffins
plain flour (225g)
melted and cooled butter
Preheat your oven to approximately 180°C and place baking cases into a muffin tin.
Sift your flour, bicarb soda, salt and baking powder together into a bowl and keep it to the side.
Mash your bananas and mix them with your sugar, lightly beaten egg and melted butter into a large bowl.
Once mixed, fold in your flour mixture and mix until it is smooth.
Spoon the combine mixture into the baking cases of your tin.
Bake in your oven for 25 to 30 minutes or until the muffins have a spring like nature.
Let them rest for 10 minutes before eating.
