Banana Muffins

  • 1.5 cup plain flour (225g)
  • 0.5 tsp baking powder
  • 1 tsp bicarb soda
  • 0.5 tsp salt
  • 3 psc ripe bananas
  • 155 gram caster sugar
  • 1 psc egg
  • 75 gram melted and cooled butter


  • Preheat your oven to approximately 180°C and place baking cases into a muffin tin.
  • Sift your flour, bicarb soda, salt and baking powder together into a bowl and keep it to the side.
  • Mash your bananas and mix them with your sugar, lightly beaten egg and melted butter into a large bowl.
  • Once mixed, fold in your flour mixture and mix until it is smooth.
  • Spoon the combine mixture into the baking cases of your tin.
  • Bake in your oven for 25 to 30 minutes or until the muffins have a spring like nature.
  • Let them rest for 10 minutes before eating.
