They are usually pretty laid back and cool but when it comes to taste sensations, they are super serious. Their flavours deliver huge bang for buck on everyone’s taste buds, at a table or on the street. Everything will be portable, walkable and carryable, and easy to devour on the hop. They will have regular IndiMex On Wheels staples and must-have daily specials.
Their yummy dishes lend themselves perfectly to street food formats; after all, they came from street food origins. Hordes of their customers travel from far and wide to eat their food and many have told them they wished they’d open an IndiMex in their neighbourhoods.

Phatboys Food Truck
Phatboys Food Truck – Jorge had a vision of a dining experience that combined his family’s culinary legacy with the unique culture and style of Brisbane, and as a result, Phatboys was born. Founded in 2015, this unique food truck blends down home Portuguese recipes and local Brisbane ingredients (when available) to create a truly one of a kind meal.
Jorge picked up countless culinary skills from his time working at ARIA Brisbane, Ribs and Rumps, and Caxton Street Catering, and he uses each of these experiences combined with his travels to inspire Phatboy’s flavorful menu. He pays particular attention to the freshness and quality of the locally sourced ingredients, ensuring that each bite is better than the last.
